The classic avocado on toast recipe... it's almost silly how simple it is. Even so, the simplicity of avocado on toast is delicious. It's elegant. It's complementary.
As much as I love the most basic avocado toast, sometimes it's nice to add a little flair. Let me tell you, balsamic reduction glaze does just that. If you've never tried making a balsamic vinegar glaze before, you are in for a real treat.
The other incredible thing about this recipe is the broccoli sprouts. Broccoli sprouts are simply broccoli plants that are only about 3-5 days old. These little plants are packed full of nutrition, and they also taste incredible. I love the fresh, almost earthy flavor that they add to sandwiches, salads, toast, and more.
If the taste alone isn't enough to make you want to eat broccoli sprouts, they are an excellent source of antioxidants that may lower the risk of cancer and reduce inflammation in the body. Are you ready for a bite of that? Let's get started!
The first step in this avocado toast is to slice the avocado and remove those delicious insides from its skin. Put the insides of the avocado into a small bowl.
Take a fork and start smashing the avocado. Add in the garlic powder, lemon juice, and salt. Mash the avocado until it has reached a spreadable consistency. You can leave it as chunky as you'd like for added texture.
Note: Smashing the avocado is a surprisingly important step in this recipe. The one time I decided to skip this step and just slice avocado straight onto bread, the balsamic glaze soaked through the avocado and into the bread. The result? Soggy bread falling apart in my hands. On the other hand, when we smash the avocado to form a paste, this paste blocks the balsamic glaze from reaching the bread, resulting in crispy toast with a TOPPING of balsamic glaze.
Take the two toasted slices of bread and begin to spread the avocado mixture over them. You can use any type of bread for your toast. I prefer whole wheat because it's significantly healthier, and I love the flavor of whole wheat flour. In this picture I have used the Harmon's 7-grain artisan bread.
The next step is to take the broccoli sprouts and pile them on top of your toast. You can add as much or as little as you'd like, but I prefer to err on the side of more. Broccoli sprouts don't have a strong flavor, so you can heap them onto the toast and it shouldn't be overwhelming.
Now that your toast is ready, it's time to start the balsamic glaze. You can start this earlier, but it's really easy to over cook the glaze so I prefer to give it my full attention. If you do end up overcooking the glaze, it will be really sticky, hard to stir, and you won't be able to drizzle it onto the toast. If this does happen to you, I've found that adding some water and bringing it back to a boil will generally fix that problem.
Take a medium sauce pan and pour in the balsamic vinegar, honey, and salt. Bring to a boil over medium heat, stirring frequently with a whisk. Simmer on low for 5 minutes, or until the glaze begins to thicken. Don't let the glaze thicken to the point that you can no longer drizzle it. If it does, add in some water and continue stirring until you've got the glaze back to the right consistency.
Once the balsamic glaze is done, you're all ready to finish plating the avocado toast. Drizzle the glaze over the top of the toast and ENJOY!!
