In college I had this tradition called "Soup Day." Every winter when it would first start to get cold we would skip class and go to Olive Garden for the lunch special. It was all you can eat soup and we would try to see how many bowls we could eat. If memory serves 6 would be a good success. The favorite and star of the show was the chicken gnocchi.
Our recipe (I believe) exceeds the quality of the famous Olive Garden chicken gnocchi and allows any day to feel like soup day. Its a super quick and easy meal that'll "knock your socks off," as the kids these days metaphorically say.
The prep on this soup is super easy. Dice an onion and chop some carrots. Get those going in the pot with a bit of oil and garlic, while you throw a lightly seasoned chicken breast in a pan. Then catch up with your family, or friends, maybe a pet, or simply waste time dilly-dallying. It's actually not important what you do I'm just trying to illustrate how easy this recipe is.
After its been going for a little bit around 5 minutes you can add the water and the chicken bullion. Note you can use chicken broth here instead but in this economy I've found it much cheaper to get the bullion and I notice no difference in flavor. Also add the thyme and salt here.
Once the carrots are softer throw the gnocchi into the water and let it boil for 2-4 minutes so it can get the nice pillowy texture.
An essential part of chicken gnocchi soup is the creamy, thick broth. To get this texture and thicken the soup we use milk and flour. Don't just drop them in though. Its important to whisk them together before you add them to the pot to avoid any flour lumps.
Make sure to keep on eye on your chicken; it will cook at varying speeds depending on how thick it is and how hot your pan is. I recommended using a meat thermometer and pulling it off as soon as it hits 165 degrees F, then let it rest to the side so it will be as juicy as possible.
Toss the spinach into the pan of soup and give it a good stir, letting it shrink as spinach magically does. There is no explanation for how it gets so small. Well there probably is, but still it shrinks so much it might as well be magic.
Finish by adding in the chicken. Stir the soup, and then you'll be ready for serving!
